COMBINE. In a small heatproof bowl, pour 1 cup boiling water over 2 tablespoons dried lavender buds.
STEEP. Cover with a towel and steep for 30 minutes.
STRAIN. Strain the lavender infusion through a fine sieve placed over a small jar and discard the solids.
SWEETEN. Add 1-3 drops of stevia, depending on how sweet you like it.
CHILL. Place lid on jar and refrigerate until cold.
MARTINI
SHAKE. In a cocktail shaker filled with ice, add gin, lime juice, vermouth, and the lavender infusion. Shake well.
STRAIN. Pour into a martini glass and garnish with a lime twist.
Notes
LIME TWIST. To make a lime twist, use a pairing knife and slowly cut around the lime taking off a long strip of the lime skin. Twist the lime skin into a spiral and place on edge of martini glass.
